Quick, easy, cheap and healthy loaded pepper chicken

 

Ingredients:

  • 4 chicken breasts
  • salt and pepper to taste
  • Bag of 3-pepper frozen veggies (onions, red and green peppers)
  • Olive oil
  • 1 cup shredded cheese (can use mozzarella, provolone, pepper jack, cheddar)

Directions:

  1. Preheat oven to 350
  2. Place chicken in an oven safe dish, season with salt and pepper, pour peppers over and drizzle with olive oil
  3. Cover with aluminum foil and place in oven
  4. Cook for 45 minutes & take out to sprinkle on cheese
  5. Cook an additional 15 minutes
  6. Remove from oven and enjoy 🙂
