Ingredients:
- 4 chicken breasts
- salt and pepper to taste
- Bag of 3-pepper frozen veggies (onions, red and green peppers)
- Olive oil
- 1 cup shredded cheese (can use mozzarella, provolone, pepper jack, cheddar)
Directions:
- Preheat oven to 350
- Place chicken in an oven safe dish, season with salt and pepper, pour peppers over and drizzle with olive oil
- Cover with aluminum foil and place in oven
- Cook for 45 minutes & take out to sprinkle on cheese
- Cook an additional 15 minutes
- Remove from oven and enjoy 🙂
