My family loves salmon patties! Not only my husband and I but so does our two year old as well! In order for my toddler to like them I had to make them TASTE good, have enough seasoning but not too much as well as not being too dry or mushy. I have created a salmon recipe that is simply amazing whether you patty them and fry them or bake them in a loaf. I will include both ways in this recipe so you can choose which route you want to take but either way they will be delicious!
Ingredients:
- 1 can salmon (bones removed)
- One egg
- 1 tsp lemon juice
- 1/2 tsp dill weed
- 3 TBSP mayo
- 1/4 cup flour
- 1/4 cup cornmeal
- 1/2 tsp salt
- 1/8 tsp pepper
Directions:
- Mix all ingredients above with a fork until mixed completely
- For loaf: preheat oven to 350 degrees, create a loaf and place in a sprayed pan, cook around 45 minutes or until a toothpick comes out clean.
- For patties: Form mixture into balls and flatten into a patty, add oil to skillet and heat (medium-low), place patties in the skillet and fry (browning on each side)
- Let cool and enjoy!
