- 1 jar of roasted salsa verde (15.7 oz)
- 1 can black beans (15 oz) (rinsed and drained) *NO/LOW SODIUM*
- 1 cup enchilada sauce
- 1 can mild Rotel (10 oz) (drained)
- 2 cups freshly grated Colby jack
- 5 cups chopped chicken fajita
- 8 corn tortillas
- 1 mashed avocado
- Preheat oven to 375 degrees.
- In a 8 x 11.5 x 2 pan place half of the jar of salsa verde on the bottom evenly.
- Top salsa verde with half of the chicken then place all of the black beans on the chicken.
- Add first layer of tortillas (4 tortillas-one in half).
- Top tortillas with 1 cup of cheese, then add second half of chicken and other half of salsa verde.
- Layer last 4 tortillas over salsa verde, then pour the can of enchilada sauce over followed by Rotel and topped with the remaining cup of cheese.
- Cover with non-stick aluminum foil (non stick side facing cheese) and cook for 20 minutes.
- Uncover and cook an additional 10-15 minutes or until cheese is melted and sauce is bubbly.
- Let cool, top with fresh mashed avocado and enjoy. Refrigerate leftovers.

Roasted garlic is so tasty and makes a major difference in your meals, sauces, appetizers and dips. If roasted correctly your garlic will be soft enough to mash and full of flavor. Roasting garlic is actually very easy to do, I have included my “recipe” to roast garlic or shallots below. I like to roast both on pizza night (for my sauce, garlic bread and pizza as well), I hope you enjoy your roasted garlic and shallots as much as my family and I do!
- whole garlic bulb
- olive oil
- Preheat oven to 400 degrees.
- Cut the top off of garlic/shallot.
- Drizzle with olive oil.
- Cover garlic and shallots with a piece of aluminum foil (ONLY ON THE TOP)
- Bake for 45 minutes.
- Let cool and pull each piece of garlic out and take outer layer off of shallot.
I will never forget THAT appointment. It was my first pregnancy and my first gestational diabetes test. I arrived early, drank my “juice” (which by the way really isn’t that bad) and waited. After an hour they tested and my blood sugar level and it was high. After two hours it was still high. I was diagnosed with gestational diabetes. Walking into this appointment I thought I would be good for sure, it wasn’t hereditary (that I knew of) and I was pretty healthy over all but boy was I wrong. I was crushed.
